Recipe: Cowboy Caviar

Ingredients

  • 1/2 cup oil
  • 1/2 cup sugar
  • 1/2 cup vinegar
  • 16 ounces Michigan pinto beans
  • 16 ounces Michigan black eye peas
  • 16 ounces Michigan black beans
  • 1 can green chillis
  • 1 yellow pepper, diced
  • 1 orange pepper, diced
  • 1 red pepper, diced
  • 1 red onion, diced

Directions

Boil sugar and vinegar for one minute, let cool and pour over beans and vegetables.

Mix to combine, and serve.
